The history of Bacalhau à Lagareiro is linked to the lagares de azeite das Beiras, in Portugal, where the workers roasted codfish with new olive oil from the fall harvest. The name “Lagareiro” refers to the workers in these lagares. The dish became a celebration of the good harvest and gained popularity, today being one of the most popular cod dishes.
