Type 130 Sifted Rye Flour is a Semi-Wholemeal flour, which because it is sifted is the same as Type 85 Rye Flour.

It is usually used in baking, making dough less elastic and more difficult to handle, but it can be mixed with wheat flour for lighter breads. This finer rye flour is traditionally used to make sourdough, to feed the natural yeast used to leaven traditional bread.
